Stir-fry beef and vegetables
Ingredients/Components
- cornstarch - 1 Tbsp
- medium mushrooms, sliced - 12 item
- soy sauce - 1/2 c
- broccoli flowerets - 2 c
- sherry - 1/4 c
- peanut or vegetable oil - 1/4 c
- celery, sliced diagonally - 1 c
- lean beef, thinly sliced across the grain - 1 lb
- mild onions, thinly sliced - 1 c
- broccoli stems, peeled and thinly sliced - 2 c
- small cloves garlic, minced or pressed - 2 item
- medium tomato, peeled and diced for garnish, optional - 1 item
How to make stir-fry beef and vegetables:
Toss beef in a bowl with soy sauce and sherry. Cover and marinate for 30 minutes. Prepare vegetables. Set aside.Heat oil in a wok or wide frying pan over low heat. Add garlic and saute over high heat. Add drained beef (reserve marinade). Stir-fry meat until cooked. Add onions, celery, broccoli and mushrooms. Cover and steam about 5 minutes.
Mix marinade with cornstarch and pour into pan. Heat to boiling. Cook for a few seconds, until thickened. Turn into a serving dish. Garnish with the tomato, if you like. Serve at once.
Good served with fluffy rice, hard rolls and fresh fruit compote for dessert. Serves four.
