Ingredients/Components

  • large egg whites - 3 item
  • c sugar - 1/2 item
  • c water - 1/4 item
  • tsp almond extract - 1/2 item
  • c graham cracker crumbs - 1/2 item
  • Tbsp cornstarch - 1 item
  • Tbsp butter melted - 1 item
  • 8 oz bar cream cheese - 1 item
  • 8 oz carton Ricotta cheese - 1 item
  • Cranberry Topping:1 16 oz can whole cranberries

How to make cranberry cheesecake:

Cranberry Topping:1 16 oz can whole cranberries1/4 c sugar1 Tbsp cornstarch1/4 c water Preheat oven 350 degrees. Mix graham cracker crumbs and butter and press in bottom of 9 inch springform pan. Combine cream cheese, ricotta cheese add the sugar and almond extract. Mix well.

In another bowl, beat the egg whites until soft peaks form. Fold egg whites into cheese mixture gradually. Pour 1/2 mixture in pan. Spread with 3/4 c cranberry topping and cover with remaining cheesecake batter. Bake 40 to 45 minutes. Remove from oven, let cool.

Spread the remaining topping. Chill overnight.

Topping: Cook cranberries and sugar together. In small bowl, mix water and cornstarch. Add to cranberry mixture. Cook just until thickens.
