  • sugar - 2 Tbsp
  • vegetable shortening - 1 item
  • curry powder - 3 6
  • large onion, chopped - 1 item
  • chicken breasts - 6 item
  • rice - 1 item
  • can whole tomatoes - 1 oz
  • thyme - 1/2 tsp
  • flour to coat chicken - 1 item
  • raisins for garnish - 1 item
  • Sauce:1 green pepper, chopped
  • can V-8 juice as needed - 1 oz

How to make country captain:

Sauce:1 green pepper, chopped1 large onion, chopped1 (16 oz.) can whole tomatoes1 (8 oz.) can V-8 juice (as needed)1/2 tsp. thyme2 Tbsp. sugar3 to 6 Tbsp. curry powder Dredge chicken breasts with flour. Fry until browned in vegetable shortening. Remove chicken to ovenproof dish and keep warm while making sauce.

Sauce: In small amount of grease left from frying, saute pepper and onion until tender. Add thyme, sugar and curry powder to taste. Add salt and pepper to taste. Immediately add can of whole tomatoes, breaking up tomatoes with spoon. Pour over chicken, using small amount of V-8 if needed, for sauce to cover chicken. Bake at 375° for 45 minutes or until done. Cover, if needed. Serve over rice. Garnish with raisins.
