  • milk - 1 c
  • salt - 1 tsp
  • flour
  • egg, slightly beaten - 1 item
  • oil - 1 item
  • baking powder - 3 tsp
  • pepper - 1/8 tsp
  • parsley
  • can whole kernel corn - 1 oz
  • shortening, melted - 1 Tbsp

How to make corn fritters:

Heat 1 1/2-inches fat to 375°. Sift flour and next 3 items together. Combine egg, milk and shortening. Pour into flour mixture and stir until just smooth. Add parsley and corn; drop by tablespoons into hot fat. Fry 3 to 5 minutes, turning as they rise. Drain on absorbent paper. Serve hot with syrup. Serves 4 to 6.
