Ingredients/Components

  • milk - 1/2 c
  • boiled corn, cut from cob * - 2 c
  • plain flour - 2 c
  • salt
  • baking powder - 3 tsp
  • eggs, well beaten - 2 item
  • butter, melted - 1 Tbsp

How to make corn fritters:

Add milk to corn. Sift dry ingredients together. Add to corn mixture. Add eggs and butter. Mix well. Drop by spoonfuls into fat heated to 375°. When brown, drain on paper towels. Serve immediately. Yields 1 1/2 dozen.

*Canned whole kernel corn may be substituted for fresh corn.
