Cold cherry soup
Ingredients/Components
- sugar - 1 c
- flour - 2 Tbsp
- heavy cream - 1 c
- red wine - 1 c
- stick cinnamon - 1 item
- can sour pie cherries - 1 item
- liquid add water to cherry juice to make - 3 c
How to make cold cherry soup:
Drain cherries, reserving juice to make liquid. Place liquid in saucepan and add cherries, cinnamon and sugar and simmer gently for 7 minutes. Blend flour with 3 tablespoons water until smooth; add 3 tablespoons more water to thin and stir into soup. Bring to a boil, stirring constantly, until thickened. Chill. Stir in cream and wine when cool.To serve, garnish with whipped cream. Flavor improves if made 24 hours in advance.
