Ingredients/Components

  • vanilla - 1 tsp
  • granulated sugar
  • milk - 1 c
  • salt - 1 tsp
  • baking powder - 4 tsp
  • shortening - 1/2 c
  • sifted cake flour - 2 c
  • lemon flavoring - 1/2 tsp
  • egg yolks, unbeaten - 4 item

How to make coconut layer cake:

Sift first four ingredients into mixing bowl. Drop in shortening. Add flavoring, 2/3 of milk. Beat 2 minutes or 300 strokes. Scrape bowl and spoon often, add rest of milk and egg yolks and beat 2 minutes longer. Pour into 2 (8-inch) pans 1 1/2 inches deep which have been lined on bottom with wax paper. Bake in oven at 375° for 30 minutes. Cool on wire rack 10 to 15 minutes before removing from pan and removing paper. Frost with 7 Minute Frosting and cover top and sides with coconut.
