Coconut layer cake
Ingredients/Components
- vanilla - 1 tsp
- granulated sugar
- milk - 1 c
- salt - 1 tsp
- baking powder - 4 tsp
- shortening - 1/2 c
- sifted cake flour - 2 c
- lemon flavoring - 1/2 tsp
- egg yolks, unbeaten - 4 item
How to make coconut layer cake:
Sift first four ingredients into mixing bowl. Drop in shortening. Add flavoring, 2/3 of milk. Beat 2 minutes or 300 strokes. Scrape bowl and spoon often, add rest of milk and egg yolks and beat 2 minutes longer. Pour into 2 (8-inch) pans 1 1/2 inches deep which have been lined on bottom with wax paper. Bake in oven at 375° for 30 minutes. Cool on wire rack 10 to 15 minutes before removing from pan and removing paper.
