Cinnamon cucumber rings
Ingredients/Components
- sugar - 8 c
- vinegar - 1 c
- red food coloring - 1/2 oz
- warm water - 1 pt
- alum - 1 Tbsp
- white vinegar - 1 pt
- red hots - 12 oz
- cucumbers - 1 gal
- sticks cinnamon - 4 item
- water enough to cover cucumbers - 1 item
- canning lime - 1 c
How to make cinnamon cucumber rings:
Peel, slice and remove seeds from cucumbers. Mix canning lime thoroughly with enough water to cover cucumbers; let stand 24 hours. Drain and wash well. Soak in cold water for 3 hours; drain well.Place in large kettle. Add vinegar, red food coloring and alum. Add enough water to cover. Simmer, but do not boil, for 2 hours. Shake or stir frequently. Drain and discard liquid.
Mix together white vinegar, sugar, cinnamon, red hots, that have been dissolved in pint of warm water and 1 ounce food coloring. Heat and seal.
