Ingredients/Components

  • sugar - 8 c
  • vinegar - 1 c
  • red food coloring - 1/2 oz
  • warm water - 1 pt
  • alum - 1 Tbsp
  • white vinegar - 1 pt
  • red hots - 12 oz
  • cucumbers - 1 gal
  • sticks cinnamon - 4 item
  • water enough to cover cucumbers - 1 item
  • canning lime - 1 c

How to make cinnamon cucumber rings:

Peel, slice and remove seeds from cucumbers. Mix canning lime thoroughly with enough water to cover cucumbers; let stand 24 hours. Drain and wash well. Soak in cold water for 3 hours; drain well.

Place in large kettle. Add vinegar, red food coloring and alum. Add enough water to cover. Simmer, but do not boil, for 2 hours. Shake or stir frequently. Drain and discard liquid.

Mix together white vinegar, sugar, cinnamon, red hots, that have been dissolved in pint of warm water and 1 ounce food coloring. Heat and seal.
