Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 1 Tbsp
- milk - 1/2 c
- salt - 1/4 tsp
- butter
- evaporated milk - 6 Tbsp
- soda - 1 tsp
- cocoa - 1/4 c
- baking powder - 1/4 tsp
- vegetable oil - 1 c
- all-purpose flour
- powdered sugar - 1 lb
- shredded fresh zucchini - 2 c
How to make chocolate zucchini sheet cake:
Frosting:1/2 c. butter1/4 c. cocoa6 Tbsp. evaporated milk1 lb. powdered sugar1 Tbsp. vanilla In a large bowl, combine sugar and oil. Add eggs, one at a time, beating well after each addition. Combine flour, cocoa, baking soda, baking powder and salt. Gradually add to the egg mixture alternately with the milk. Stir in the zucchini and vanilla. Pour in greased 15 x 10 x 1-inch pan. Bake at 375° for 25 minutes or until cake tests done.Combine all frosting ingredients. Mix until smooth. Spread frosting over cake while hot. Yields 20 servings.
