Ingredients/Components

  • sugar
  • vanilla - 1 tsp
  • milk - 2 c
  • salt - 1 item
  • butter - 2 Tbsp
  • cornstarch - 2 Tbsp
  • eggs, separated - 3 item
  • water - 1 Tbsp
  • cocoa - 4 Tbsp
  • egg whites - 3 item
  • plain flour - 1 Tbsp
  • water, boiling
  • baked pie shell - 1 item

How to make chocolate pie:

Meringue:1/2 c. water, boiling1 Tbsp. cornstarch1 Tbsp. water3 egg whites6 Tbsp. sugar Heat milk in saucepan. Mix sugar, salt, cornstarch, flour and cocoa. Add milk to dry mixture; mix well. Boil 1 minute over medium heat, stirring constantly. Remove from heat. Stir half of mixture into beaten egg yolks, then blend into hot mixture in pan. Boil 1 minute, stirring constantly. Remove from heat, blend in butter and vanilla. Cool. Pour into baked pie shell. Top with meringue. Bake in 400° oven for 8 to 10 minutes.

Meringue: Dissolve cornstarch in 1 tablespoon water. Add to boiling water, making a paste; let paste cool. Beat egg whites until stiff. Add sugar 1 tablespoon at a time while continuing to beat, then add cornstarch paste 1 tablespoon at a time. Beat until peaks form.
