Chocolate meringue pie
Ingredients/Components
- graham cracker crumbs
- honey - 2 Tbsp
- oil - 1 Tbsp
- sugar - 3/4 c
- cocoa powder - 6 Tbsp
- flour or 3 Tbsp - 1/3 c
- salt - 1/4 tsp
- skim milk - 2 c
- egg, beaten - 1 item
- vanilla - 2 tsp
- egg whites - 3 item
- cream of tartar - 1/4 tsp
How to make chocolate meringue pie:
Combine graham cracker crumbs, honey and oil. Mix well and press into a 9-inch pie pan. Bake for 10 minutes at 350°.In a medium saucepan, combine the 3/4 cup of sugar, cocoa powder, flour and salt. Place over moderate heat and gradually stir in milk. Cook and stir until thickened and bubbly. Cook 1 to 2 more minutes. Remove from heat. Stir a small amount of the hot mixture into the beaten egg; add egg to saucepan. Return to heat and cook 2 more minutes. Stir in 2 teaspoons of vanilla. Pour the mixture into crust.
To make topping, beat egg whites with cream of tartar and the 1/2 teaspoon of vanilla until mixture forms soft peaks. Gradually add 6 tablespoons of sugar, beating until glossy and the mixture forms stiff peaks. Spread topping over the filling. Bake at 350° until golden brown, about 12 minutes. Makes 8 servings, 295 calories per serving and 5.5 grams of fat.
