Chocolate meringue cookies
Ingredients/Components
- sugar - 1/2 c
- vanilla - 1 tsp
- semi-sweet chocolate chips - 1/2 c
- large egg whites - 2 item
- cocoa unsweetened - 3 Tbsp
How to make chocolate meringue cookies:
Preheat oven to 250°. Line 2 baking sheets with aluminum foil and set aside.In a large bowl, beat the egg whites at moderately high speed until they hold stiff peaks. Beat in the sugar, 1 tablespoon at a time, then beat in vanilla. Reduce speed to low and beat in cocoa. Fold in chocolate chips. Drop the mixture by rounded teaspoonfuls onto the baking sheets, 1 inch apart. Bake for 1 hour. Turn off oven and dry cookies in oven 2 hours longer. Remove and store in airtight container. Makes about 40 cookies.
Note: Nuts may be used or a pinch of cinnamon and nutmeg in beaten egg whites.
