  • sifted cake flour - 1 c
  • unsweetened cocoa - 1/4 c
  • baking powder - 1 tsp
  • salt - 1/4 tsp

  • cold brewed coffee - 1/3 c
  • vanilla - 1 tsp
  • confectioners sugar - 1 item
  • instant coffee optional
  • heavy cream
  • sifted confectioners sugar - 1/2 c

  • strong brewed coffee - 1/4 c
  • butter - 1 c
  • light corn syrup - 3/4 c
  • egg yolks - 4 item

How to make chocolate cake roll:

Filling:2 tsp. instant coffee (optional)1 1/2 c. heavy cream1/2 c. sifted confectioners sugar Frosting:1 (6 oz.) pkg. chocolate chips1/4 c. strong brewed coffee1 c. butter3/4 c. light corn syrup4 egg yolks Grease a 15 x 10 x 1-inch jelly roll pan. Line bottom with waxed paper. Grease paper.

Sift flour, cocoa, baking powder and salt onto a fresh piece of waxed paper. Beat eggs in a medium bowl with an electric mixer until thick and creamy. Gradually add sugar, beating constantly until mixture is very thick. Stir in coffee and vanilla. Fold in flour mixture. Spread batter evenly in prepared pan. Bake in a moderate 375° oven for 12 minutes or until center springs back when pressed. Loosen cake around edges with a knife. Invert pan onto clean towel dusted with confectioners sugar. Peel off wax paper. Trim 1/4-inch from all sides. Starting at the short end, roll up cake and towel together. Place seam side down on wire rack. Cool completely. Then unroll carefully.

Spread evenly with Coffee Cream Filling. Reroll. Place seam side down on serving plate.

Spread outside of roll evenly with Chocolate Satin Frosting. Sprinkle with shaved chocolate (optional). Keep refrigerated until ready to serve.

Coffee Cream Filling: Dissolve coffee in small amount of cream. Combine remaining cream and the sugar in a medium bowl. Beat with electric mixer until stiff.
