Chili chicken stew
Ingredients/Components
- salt - 1/2 tsp
- oil - 2 Tbsp
- chopped onion - 1 c
- chili powder - 1 tsp
- ground cumin - 1 tsp
- cloves minced garlic - 2 item
- picante sauce - 2/3 3/4
- pinto beans, drained - 1 can
- each stewed tomatoes - 2 cans
- whole chicken breasts, split, boned and skinned - 3 item
- medium chopped bell pepper - 1 item
How to make chili chicken stew:
Cut chicken into 1-inch pieces. Cook chicken, onion, bell pepper and garlic in oil in Dutch oven until chicken loses its pink color. Add remaining ingredients; simmer 45 minutes. Ladle into bowls and top with cheese, onion, avocado, sour cream or picante. Yields 6 to 8 servings.Recipe categories: Main dish, One Dish meal, Stew.
