Tortilla soup
Ingredients/Components
- salt - 1 tsp
- water
- olive or vegetable oil - 2 Tbsp
- pepper - 1/8 tsp
- Worcestershire sauce - 2 tsp
- chopped onion - 1 item
- chili powder - 1 tsp
- can chicken broth - 1 1/2
- tomato sauce - 3/4 c
- ground cumin - 1 tsp
- cloves minced garlic - 3 item
- shredded Monterey Jack cheese - 1/4 c
- steak sauce - 1 Tbsp
- can beef consomme - 1 1/2
- peeled, chopped tomatoes - 1 c
- can drained, chopped green chiles - 1 oz
- green and 1/2 red pepper, chopped - 1/2 item
- handfuls corn tortilla chips - 3 item
How to make tortilla soup:
Saute onion, chiles, garlic and peppers in oil until soft. Add tomatoes, consomme, broth, water, tomato sauce, chili powder, salt, pepper, Worcestershire and steak sauce. Bring soup to a boil, lower heat to simmer and cook, covered, for 1 hour. Add tortillas and cheese and simmer 10 minutes more.If desired, drop in 1 chopped avocado the last 3 minutes. Can add 1 grilled chicken breast per serving, if more substantial meat is desired.
