Ingredients/Components

  • sugar - 1 tsp
  • salt - 1/2 tsp
  • vegetable oil - 2 Tbsp
  • lemon juice - 2 Tbsp
  • ground ginger - 1/4 tsp
  • pepper - 1/8 tsp
  • soy sauce - 1/4 c
  • garlic clove, minced - 1 item
  • boneless chicken breasts - 1 lb
  • small bunch scallions - 1 item

How to make chicken yakitori:

Remove any skin from the chicken. Cut meat into 1-inch cubes and place in bowl. Trim and wash scallions; cut enough thin slices for 1/4 cup. Cut remaining scallions into 2-inch sticks and set aside. Combine sliced scallions and remaining ingredients in a jar; cover. Shake well and pour over chicken cubes. Cover the bowl and marinate in refrigerator for 3 to 4 hours, stirring occasionally. Thread chicken cubes on skewers, alternating with scallion sticks. Place skewers on a broiler rack or out over grill 4 inches from heat and cook 1 to 2 minutes on each side until chicken is done. Serves 4.
