Ingredients/Components

  • butter or margarine - 3 Tbsp
  • flour - 2 Tbsp
  • light cream or evaporated milk - 2 c
  • chicken broth - 1 c
  • salt and pepper to taste - 1 item
  • small onion, chopped - 1 item
  • Cheddar cheese, shredded - 6 oz
  • carrots, sliced thin - 2 item
  • large stalk celery, chopped - 1 item
  • frozen broccoli and cauliflower mixture, cooked until tender optional - 1/2 pkg

How to make cheese soup:

Melt butter in saucepan. Saute onion, celery and carrots until tender, about 5 to 10 minutes. Sprinkle flour over vegetables in saucepan and stir well. Add optional vegetables here.

Slowly stir in chicken broth. Raise heat to medium. Cook, stirring constantly, until mixture is thickened and bubbly. Stir in cream or evaporated milk and cheese into mixture.

Cook, stirring constantly until cheese melts. Do not boil or soup will curdle. Serve immediately. Serves 4 to 6.
