Ingredients/Components

  • salt - 1 tsp
  • flour - 1/2 c
  • boiling water - 2 c
  • cooking oil - 3 Tbsp
  • pepper - 1/2 tsp
  • chopped onion - 1/4 c
  • chicken bouillon cubes - 2 item
  • garlic cloves, minced - 2 item
  • uncooked long grain rice - 1 c
  • minced fresh parsley optional - 1 item
  • can mushroom stems and pieces, undrained - 1 oz

How to make chicken rice dinner:

Combine flour, salt and pepper. Coat chicken pieces. In a large skillet, over medium heat, brown the chicken in oil.

Place rice in an ungreased 13 x 9 x 2-inch baking pan. Sprinkle with onion and garlic. Top with mushrooms. Dissolve bouillon in boiling water; pour over all. Place chicken pieces on top.

Cover and bake at 350° for 1 hour or until chicken juices run clear and rice is tender. Sprinkle with parsley, if desired. Yields 5 servings.
