  • sour cream - 1 pt
  • vegetable oil - 1 item
  • lemon juice - 1 Tbsp
  • onion, chopped - 1 item
  • Cheddar cheese, grated - 1 item
  • bunch green onions, chopped - 1 item
  • tomatoes - 2 item
  • flour tortillas - 1 pkg
  • red bell pepper, chunked - 1 item
  • skinless boneless chicken breasts, thawed - 1 item
  • green bell pepper, chunked - 1 item
  • yellow bell pepper, chunked - 1 item

How to make chicken fajitas:

Cut chicken breasts into small strips or chunks. Marinate approximately 4 skinless, boneless chicken breasts in approximately 1/2 to 1 cup of vegetable oil, lemon juice and chopped green onions. Put in glass baking dish (9 x 13-inch). Cover and let sit in refrigerator overnight.

Cut green, red and yellow bell peppers in strips and saute in oil with chopped onion. Grate approximately 2 cups Cheddar cheese and put in separate dish. Chop tomatoes. Sour cream is optional.

Cook strips of chicken gently in oil. Add more chopped green onions, if desired. When chicken is slightly brown, add 1 of the chopped tomatoes. Cook approximately 3 minutes.

Warm flour tortillas. Individuals fix own fajita, rolled in tortilla, with all ingredients as desired. Hot sauce is also good in each tortilla.
