  • sliced pitted ripe olives - 1 c
  • shredded Cheddar cheese - 2 c
  • flour tortillas - 12 item
  • large sour cream - 1 item
  • Hidden Valley Ranch original Ranch salad dressing mix - 2 pkg
  • cooked chicken, sauteed chicken tenders - 3 4

How to make chicken enchiladas:

Combine sour cream, dressing mix and 1/2 of the cheese. Reserve about 1/3 of this mixture. Add cut up chicken and olives and mix. Spoon chicken mixture onto tortilla shell. Roll up and place seam side down on a 13 x 9 x 2-inch baking dish. Sprinkle with remaining cheese. Bake at 375° for 25 minutes. Spoon reserved sour cream mixture over tortillas. Serve with medium salsa spooned on top. Serves 6.
