Ingredients/Components
- chicken, boiled - 1 item
- can cream of chicken soup - 1 item
- can cream of mushroom soup - 1 item
- can Ro-Tel tomatoes with green chilies - 1 item
- green pepper - 1 item
- onion - 1 item
- butter - 2 Tbsp
- Doritos - 1 pkg
- grated Cheddar cheese - 1 c
How to make chicken enchiladas:
Cook chicken, remove from bone and cut into small pieces. Save broth. Saute green pepper and onion in butter; add soups, chicken and tomatoes. Heat. Grease casserole and completely line with Doritos that have been softened in chicken broth. Cover with chicken mixture and top with grated cheese. Bake 35 minutes at 350°.
