Ingredients/Components
- chopped onion - 1/2 c
- can evaporated milk - 1 3/4
- cans cream of chicken soup - 2 3/4
- Cheddar cheese, shredded - 8 oz
- can green chilies, chopped - 1 oz
- corn tortillas, cut in small pieces - 1 doz
- cooked, cubed chicken breasts - 3 4
How to make chicken enchilada casserole:
Preheat oven to 350°. Mix chicken, soup, milk, onion and chili peppers. In greased 2-quart casserole, place a layer of tortillas, layer of chicken mixture and layer of cheese.
