Chicken enchilada casserole
Ingredients/Components
- Velveeta cheese - 1 lb
- can cream of chicken soup - 1 item
- can Ro-Tel tomatoes - 1 item
- can cream of celery soup - 1 item
- onion, chopped - 1 item
- celery, chopped - 1/2 c
- bell pepper, chopped - 1/2 item
- corn tortilla shells - 1 pkg
- or 3 chicken breasts, boiled and chopped - 2 item
How to make chicken enchilada casserole:
Saute onion, bell pepper and celery together. Boil and chop chicken breasts. Mix with soups and cheese.Layer casserole dish with tortilla shells, soup mixture, shells and soup mixture. Sprinkle shredded cheese on top. Bake at 350° for 15 to 20 minutes.
