Ingredients/Components

  • salt - 1 item
  • lemon juice - 1/4 c
  • clove garlic, minced - 1 item
  • Dijon mustard - 2 tsp
  • basil - 1 item
  • olive oil - 3/4 c
  • black pepper - 1/2 tsp
  • finely chopped parsley - 1 item
  • green peppers, sliced - 2 item
  • finely grated Parmesan cheese - 1/4 c
  • boneless, skinless chicken halves - 4 item
  • can anchovies, drained and chopped - 1 item
  • green beans, drained and cooled - 1/2 lb
  • to 8 small potatoes, cooked and cooled, cut into quarters - 6 item
  • cooked or thawed frozen corn - 3/4 c
  • medium carrot, cut in halves - 1 item

How to make chicken caesar:

To make Caesar Dressing, place first 7 ingredients in food processor, processing until smooth and creamy. Add salt to taste.

Place chicken in a shallow glass dish. Pour 1/4 cup dressing over chicken; turn to coat. Let stand while preparing vegetables. Place vegetables in large bowl and toss with remaining dressing. Oil hot grid to prevent sticking. Grill chicken, on a covered grill, over medium Kingsford briquets, until chicken is cooked through, turning once. Slice chicken crosswise and serve with vegetables. Sprinkle on parsley or basil and serve at once.
