Black-eyed pea salad
Ingredients/Components
- lemon juice - 3 Tbsp
- dry mustard - 1/4 tsp
- clove garlic, minced - 1 item
- minced fresh parsley - 1/2 c
- oregano - 1/2 tsp
- basil - 1 tsp
- olive oil - 2 3
- black pepper - 1/4 tsp
- medium onion, chopped - 1 item
- black-eyed peas - 1/2 lb
- balsamic vinegar - 3 Tbsp
- red and yellow sweet pepper, chopped - 1/2 c
How to make black-eyed pea salad:
Rinse black-eyed peas well. Soak overnight. Rinse with fresh water again, then cook until tender. Drain. Pour lemon juice and garlic over warm peas and let cool while marinating. Add remaining ingredients to black-eyed peas after they are cool. Toss well. Chill 2 hours.Optional: Thin slices of Chinese cabbage may be added just before serving.
