Ingredients/Components

  • salt - 4 tsp
  • cooking oil - 1/2 c
  • pepper - 1/2 tsp
  • cloves garlic, minced - 2 item
  • can tomato sauce - 15 oz
  • oregano - 3 tsp
  • celery seed - 2 tsp
  • chicken breasts - 8 item
  • medium onions, sliced - 3 item
  • can crushed tomatoes - 28 oz
  • chicken legs - 4 item

How to make chicken cacciatore:

Brown the chicken in hot oil. As the chicken browns, remove it to a large saucepan. Place the onions and garlic in oil and cook until golden. Remove and add to chicken. Drain the oil. Use the same skillet to mix the other ingredients. Pour over the chicken. Cover and simmer for 15 minutes. Uncover and cook for another 30 minutes. Turn occasionally. Cool and refrigerate.

Day of serving: Skim off fat that has risen to top. Cook, uncovered, 20 minutes, turning gently. Serve over rice or spaghetti.

This is ideal for company. Better cooked the day before or frozen as the chicken takes on the taste of the sauce. Good as leftover.
