Ingredients/Components
- salt - 1 item
- butter - 1/2 lb
- pepper - 1 item
- dry white wine - 1/2 c
- chopped parsley - 2 Tbsp
- fresh or canned mushrooms - 1/2 lb
- large chicken breasts, cut in half - 4 item
- shallots, chopped or green onions - 6 item
How to make chicken breasts:
Note: Toasted and shredded almonds may be used in place of mushrooms. If so, let them be the last touch before serving.Remove bone with sharp knife. Rub chicken with salt and pepper. Broil on both sides until brown. Add shallots; lower heat. Cover skillet. Cook slowly for half an hour. Five minutes before taking off heat, add sliced mushrooms. Cook 5 or 6 minutes longer. Remove chicken to platter; add wine and parsley to mixture in skillet. Stir. Pour over chicken. Serves 8.
