  • hot red pepper sauce - 1/2 tsp
  • Worcestershire sauce - 1/4 tsp
  • salt and pepper to taste - 1 item
  • slices Brick or other cheese
  • hamburger buns - 4 item
  • Beer-Braised Onions recipe follows - 1 item
  • Mushroom-Beer Ketchup recipe follows; optional - 1 item
  • sliced tomato and lettuce optional - 1 item
  • Gently form into 4 6 ounce 1-inch thick burgers
  • large onion, thinly sliced - 1 item
  • sugar - 1 tsp
  • salt - 1/2 tsp
  • butter
  • small onion, chopped - 1 item
  • sliced mushrooms - 1/4 lb
  • each: beer and ketchup - 1/3 c
  • white vinegar - 1 tsp
  • each: sugar and salt - 1/2 tsp

How to make chicago beer burgers:

Gently combine the first 5 ingredients thoroughly. Gently form into 4 (6 ounce) 1-inch thick burgers. Cover the burgers with plastic wrap and refrigerate up to several hours. Grill the burgers over medium grill or charcoal fire. Cook to the desired doneness, 3 to 4 minutes on each side for rare, 5 to 6 minutes on each side for medium and 8 to 9 minutes for well done. Top burger with Beer-Braised Onions and cheese, allowing it to melt quickly. Place on toasted buns, cut side down, on grill. Serve burgers with lettuce and tomato and Mushroom-Beer Ketchup on the side.Beer-Braised Onions:1 Tbsp. unsalted butter1 large onion, thinly sliced3/4 c. beer1 tsp. sugar1/2 tsp. salt Mushroom-Beer Ketchup:1 Tbsp. butter1 small onion, chopped1/4 lb. sliced mushrooms1/3 c. each: beer and ketchup1 tsp. white vinegar1/2 tsp. each: sugar and salt Beer-Braised Onions: Melt butter in a 3-quart saucepan over medium-high heat. Add onion and cook, stirring until tender, 5 to 6 minutes. Add beer, sugar and salt. Cook until all beer has been absorbed by onion and they begin to brown. Stir in added 1/2 cup beer and heat to a simmer. Serve hot.

Mushroom-Beer Ketchup: Put butter in a 3-quart saucepan. Add onion and cook until tender. Stir mushrooms; cook 3 to 4 minutes. Stir in beer and ketchup, vinegar, sugar and salt. Puree in blender if desired. Then return to saucepan and simmer until slightly thickened, about 12 minutes. Cool.
