Ingredients/Components
- sugar - 1 c
- butter or margarine - 1 Tbsp
- salt - 1/2 tsp
- almond extract - 1/4 tsp
- shortening - 1/2 c
- all-purpose flour
- ice water - 1/4 c
- red food coloring optional - 1 item
- quick cooking tapioca - 3 Tbsp
- each cans tart cherries
How to make cherry pie:
Filling:2 (16 oz. each) cans tart cherries1 c. sugar3 Tbsp. quick cooking tapioca1/4 tsp. almond extract1/4 tsp. salt red food coloring (optional)1 Tbsp. butter or margarine In a bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half. Roll out one-half to fit a 9-inch pie plate for bottom crust. Drain cherries, reserving 1/4 cup juice. Mix cherries, juice, sugar, tapioca, extract, salt and food coloring, if desired. Pour into the crust. Dot with butter. Top with a lattice crust. Bake at 375° for 55 to 60 minutes.
