  • graham cracker crumbs
  • sugar - 1/4 c
  • butter, melted - 1/4 c
  • Cover bottom and part way up the sides of a 9-inch pie pan
  • eggs - 3 item
  • vanilla - 1 tsp
  • grated lemon peel or lemon juice - 2 Tbsp
  • Add sugar, eggs, vanilla and lemon; beat until smooth
  • sour cream - 2 c

How to make cheesecake:

Combine cracker crumbs, sugar and butter. Cover bottom and part way up the sides of a 9-inch pie pan. Press lightly and chill.Filling:2 (8 oz.) pkg. softened cream cheese1/2 c. sugar3 eggs1 tsp. vanilla2 Tbsp. grated lemon peel or lemon juice Beat cream cheese until fluffy. Add sugar, eggs, vanilla and lemon; beat until smooth. Pour into crumb-lined pan. Bake in preheated 375° oven for 25 minutes. Remove and cool at room temperature.Topping:1/4 c. sugar1 tsp. vanilla2 c. sour cream Fold sugar and vanilla into sour cream. Spread sour cream mixture over cooled, baked cake. Bake in preheated 425° oven or 10 minutes. Remove, cool and refrigerate 6 to 10 hours.
