Ingredients/Components

  • eggs - 4 item
  • milk - 1/2 c
  • salt - 3/4 tsp
  • flour - 1 c
  • baking powder - 1 Tbsp
  • shredded Cheddar cheese - 6 8
  • cayenne pepper - 1/8 tsp
  • Blue cheese, crumbled - 1 oz

How to make cheese fritters:

Heat milk just enough to dissolve Blue cheese. Mix dry ingredients, then stir in milk mixture to blend. Add 4 eggs and blend. Stir in Cheddar cheese. Chill well (preferably overnight). Drop by teaspoonfuls into hot oil and fry until golden. Serve with a sauce of sour cream mixed with a little honey and prepared mustard.
