  • tortillas - 12 item
  • salad oil - 1/3 c
  • chopped onion - 1/2 c
  • can enchilada sauce - 1 oz
  • butter
  • flour - 1/4 c
  • salt - 1/2 tsp
  • paprika - 1/4 tsp
  • milk - 2 c
  • cheese 1 1/2 c - 6 oz

How to make cheese enchiladas:

Cheese Sauce:1/4 c. butter1/4 c. flour1/2 tsp. salt1/4 tsp. paprika2 c. milk6 oz. cheese (1 1/2 c.) Fry tortillas in hot oil for 5 seconds on each side. Dip tortilla in enchilada sauce. Spoon some of the cheese sauce inside and roll up. Place, seam side down, in baking dish. Combine remaining cheese sauce and enchilada sauce; pour over tortillas. Bake at 350° for 25 minutes.

Sauce: Melt butter; blend in flour, salt and paprika. Add milk; stir until sauce thickens. Blend in cheese.
