Ingredients/Components

  • salt - 1 tsp
  • flour - 6 Tbsp
  • butter
  • whipping cream - 1 pt
  • pepper - 1/4 tsp
  • salt and pepper - 1 item
  • onion, finely chopped - 1 item
  • chicken breasts - 3 item
  • hot chicken broth - 2 c
  • mild Cheddar cheese, grated - 1 lb
  • dozen flour tortillas - 1 item
  • small cans Ortega diced green chili peppers - 2 item

How to make chalupas:

Cream Sauce:4 Tbsp. butter1 tsp. salt6 Tbsp. flour1/4 tsp. pepper2 c. hot chicken broth1 pt. whipping cream Boil chicken, strip from bone and chop. Mix chicken, chopped onion, salt and pepper, grated cheese and cans of chili peppers. Fill tortillas and roll. Pour Cream Sauce over them, making sure sauce runs through them. Cover and refrigerate overnight. Bake covered for 50 to 55 minutes at 325°.

Cream Sauce: Melt butter in heavy saucepan. Cook, stirring constantly for 2 minutes or until mixture bubbles and smooths. Remove from heat and add hot chicken broth. Return to heat and stir vigorously with whisk or wooden spoon.

Sauce will thicken in about 1 minute. Add salt and pepper. Cook over low heat another 5 minutes. Add unwhipped cream. Stir until smooth. Pour over chalupas. Cover and refrigerate overnight.
