Celery relish
Ingredients/Components
- sugar - 6 c
- salt - 1/2 c
- boiling water - 2 c
- vinegar - 4 c
- turmeric - 1 Tbsp
- mustard seeds - 1/3 c
- 3/4 quarts celery chopped - 3 item
- sweet pepper chopped - 4 c
- yellow sweet onions chopped - 4 item
- hot pepper chopped - 4 item
How to make celery relish:
Grind celery, sweet peppers, onions and hot peppers; then cover with salt and boiling water. Let stand for 10 minutes and drain. Bring to a boil the sugar, vinegar, mustard seeds and turmeric. Add the celery mixture and let boil for 15 minutes. Put into pint jars and seal. Makes about 12 pints.Recipe categories: < 4 hours, Weeknight, Canning.
