Ingredients/Components

  • sugar - 6 c
  • salt - 1/2 c
  • boiling water - 2 c
  • vinegar - 4 c
  • turmeric - 1 Tbsp
  • mustard seeds - 1/3 c
  • 3/4 quarts celery chopped - 3 item
  • sweet pepper chopped - 4 c
  • yellow sweet onions chopped - 4 item
  • hot pepper chopped - 4 item

How to make celery relish:

Grind celery, sweet peppers, onions and hot peppers; then cover with salt and boiling water. Let stand for 10 minutes and drain. Bring to a boil the sugar, vinegar, mustard seeds and turmeric. Add the celery mixture and let boil for 15 minutes. Put into pint jars and seal. Makes about 12 pints.
