Carrots vichy
Ingredients/Components
- butter - 4 Tbsp
- salt and pepper - 1 item
- cognac or brandy - 2 Tbsp
- to 12 carrots - 8 item
- minced cilantro or parsley - 1/4 c
How to make carrots vichy:
In a wide frying pan, lay carrots flat and add water to cover. Bring to a boil over high heat and then reduce heat to simmer and cover. Cook until carrots are tender when pierced, about 15 to 20 minutes. Drain.Add butter and cognac to pan. Cook over medium-high heat, shaking pan until carrots are lightly browned on all sides. Mix in cilantro and season to taste. Makes 4 to 6 servings.
