- flour - 2 c
- soda - 2 tsp
- grated carrots - 3 c
- stick butter - 2/3 item
- box confectioners sugar - 1 item
- Wesson oil
- nuts added last; walnuts or pecans - 1 c
How to make carrot cake with cream cheese frosting:
Frosting:1 (8 oz.) pkg. plain Philadelphia cream cheese2/3 stick butter1 box confectioners sugar1 tsp. vanilla1 c. nuts (added last; walnuts or pecans) Mix grated carrots and pour Wesson oil over them. Mix flour, soda, cinnamon, salt and sugar together and sift. Add eggs, one at a time, beating good after each, then add carrots and Wesson oil. Do not use mixer. Bake 35 to 40 minutes in 350° oven.Cream Cheese Frosting: Mix all ingredients on low speed. Add the walnut or pecans last.
