Ingredients/Components

  • sugar
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • pkg - 8 oz
  • salt - 1/2 tsp
  • baking soda - 2 tsp
  • ginger - 1/2 tsp
  • unsifted all-purpose flour - 2 c
  • mayonnaise - 3/4 c
  • can crushed pineapple, undrained - 1 oz
  • coarsely chopped walnuts - 3/4 c
  • coarsely shredded carrots - 2 c
  • Stir together first 5 items

How to make carrot cake:

Grease and flour 2 (9-inch) cake pans. Stir together first 5 items. Set aside.

In large bowl at medium speed, beat next 4 ingredients until well blended. Slowly mix in flour mixture until well mixed. With spoon, stir in carrots and nuts. Bake at 350° for 30 to 35 minutes.Cream Cheese Icing:1/2 c. margarine8 oz. pkg. cream cheese16 oz. pkg. powdered sugar1 tsp. vanilla Cream margarine and cheese; beat in vanilla and gradually add sugar, beating until light and fluffy.
