Ingredients/Components
- sugar
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- pkg - 8 oz
- salt - 1/2 tsp
- baking soda - 2 tsp
- ginger - 1/2 tsp
- unsifted all-purpose flour - 2 c
- mayonnaise - 3/4 c
- can crushed pineapple, undrained - 1 oz
- coarsely chopped walnuts - 3/4 c
- coarsely shredded carrots - 2 c
- Stir together first 5 items
How to make carrot cake:
Grease and flour 2 (9-inch) cake pans. Stir together first 5 items. Set aside.In large bowl at medium speed, beat next 4 ingredients until well blended. Slowly mix in flour mixture until well mixed. With spoon, stir in carrots and nuts. Bake at 350° for 30 to 35 minutes.Cream Cheese Icing:1/2 c. margarine8 oz. pkg. cream cheese16 oz. pkg. powdered sugar1 tsp. vanilla Cream margarine and cheese; beat in vanilla and gradually add sugar, beating until light and fluffy.
