  • sugar - 2 c
  • cinnamon - 2 tsp
  • vanilla - 1 tsp
  • pkg
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • butter - 1/2 c
  • soda - 2 tsp
  • grated carrots - 3 c
  • baking powder - 2 tsp
  • nuts - 1/2 c
  • sifted powdered sugar
  • cake flour - 2 c
  • canola oil
  • eggs unbeaten - 4 item
  • small amount of cream - 1 item

How to make carrot cake:

Icing:1 (3 oz.) pkg. cream cheese1 1/2 c. sifted powdered sugar1 tsp. vanilla small amount of cream1/2 c. nuts1/2 c. butter Cream sugar, oil and eggs at once. Sift dry ingredients together and add to egg mixture. Fold in carrots and nuts. Bake at 350° in a tube pan for 1 to 1 1/2 hours.

Icing: Blend cheese, sugar, butter and vanilla with cream until smooth. Stir in nuts.
