  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • chopped pecans - 1 c
  • pkg
  • salt - 1 tsp
  • flour - 2 c
  • stick margarine - 1 item
  • soda
  • baking powder - 2 tsp
  • cooking oil
  • box powdered sugar - 1 item
  • crushed pineapple and juice
  • grated raw carrots - 2 c

How to make carrot cake:

Frosting:1 (8 oz.) pkg. cream cheese1 box powdered sugar1 stick margarine2 tsp. vanilla Sift together flour, baking powder, soda, salt and cinnamon; then set aside. Mix together the cooking oil, sugar and eggs, beating after each. Add dry ingredients and mix well until smooth. Add carrots, pineapple and pecans. Grease and flour a 10-inch Bundt or tube pan. Bake 1 hour at 350°. Cool completely and spread with cream cheese frosting. Beat frosting ingredients until of spreading consistency.
