  • sugar - 2 c
  • eggs - 4 item
  • salt - 1 tsp
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • all-purpose flour - 2 c
  • cooking oil - 1 c
  • ground cinnamon - 1 tsp
  • Cream Cheese Frosting - 1 item
  • finely shredded carrot 9 carrots - 3 c

How to make carrot cake:

Grease and lightly flour a 13 x 9 x 2-inch baking pan. In a large mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and cinnamon; add carrots, oil and eggs. Mix until moistened; beat at medium speed of electric mixer for 2 minutes. Pour into preferred (13 x 9 x 2-inch) baking pan. Bake in a 325° oven for 50 to 60 minutes or until wooden pick inserted in center comes out clean. Cool thoroughly on wire rack. Frost with Cream Cheese Frosting. Serves 12 to 15.
