Carrot pineapple cake
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla - 1 tsp
- chopped pecans - 1/2 c
- salt - 1/2 tsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- all-purpose flour
- dash of salt - 1 item
- sifted powdered sugar
- cooking oil - 2/3 c
- softened butter or margarine - 4 Tbsp
- ground cinnamon - 1 tsp
- crushed pineapple with syrup - 1/2 c
- finely shredded raw carrot - 1 c
- Add oil, eggs, carrot, pineapple and vanilla; mix until all ingredients are moistened
How to make carrot pineapple cake:
In large mixer bowl, stir together dry ingredients. Add oil, eggs, carrot, pineapple and vanilla; mix until all ingredients are moistened. Beat with electric mixer 2 minutes at medium speed. Pour batter into greased and lightly floured 9 x 9 x 2-inch baking pan. Bake in a 350° oven for about 35 minutes; cool. Frost with Cream Cheese Frosting.Cream Cheese Frosting:1 (3 oz.) pkg. cream cheese, softened4 Tbsp. softened butter or margarine1 tsp. vanilla dash of salt2 1/2 c. sifted powdered sugar1/2 c. chopped pecans Cream together cream cheese and butter or margarine; beat in vanilla and salt.
