  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • pkg - 1 oz
  • flour - 2 c
  • butter - 1/2 c
  • oil
  • soda - 2 tsp
  • grated carrots - 2 c
  • or more crushed pineapple or nuts - 1/4 c
  • Place in slightly greased pan
  • pineapple and nuts - 1 item

How to make carrot cake:

Put all ingredients in one bowl; mix well. Place in slightly greased pan. Bake at 400° until cake springs back lightly. When cool, pour icing over cake.Icing:1 1/4 c. powdered sugar1/2 c. butter1 (3 oz.) pkg. cream cheese pineapple and nuts
