  • cinnamon - 1 tsp

  • packed brown sugar - 3/4 c

  • all-purpose flour - 3 c
  • shredded carrots - 2 c
  • orange juice - 1/2 c
  • grated orange rind - 1 Tbsp
  • orange rind - 1 tsp
  • pecans, finely chopped - 2 Tbsp
  • butter, at room temperature - 1/2 lb
  • butter, softened at room temperature - 1 Tbsp

How to make carrot cake:

For Glaze:1 1/2 c. confectioners sugar1 Tbsp. butter, softened at room temperature1/2 tsp. vanilla2 to 3 Tbsp. orange juice1 tsp. orange rind2 Tbsp. pecans, finely chopped In large bowl of electric mixer, place butter and both sugars. With mixer on low, cream together until soft and fluffy. Add cinnamon, nutmeg and orange rind. Beat in eggs, one at a time, until well blended. Stir in vanilla, carrots and pecans.

In a medium bowl, place flour, baking powder and salt; stir briefly with a wire whisk to combine. Add to the creamed mixture alternately with the orange juice, beginning and ending with the flour.

Spoon batter into a buttered and floured 10-inch tube pan. Bake in 350° oven for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Remove and cool completely on a wire rack.

Glaze: Sift confectioners sugar; place in small bowl. Stir in butter and vanilla. Stir in two tablespoons orange juice. Add remaining juice, a teaspoon at a time, until correct consistency. Mixture should be thick, not runny.

Place cake on serving dish. Spoon glaze over top, letting it run down the sides of the cake. Sprinkle with orange rind and chopped pecans. Makes 16 servings.
