Down south yam cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 5 item
- vanilla
- chopped pecans - 1 c
- milk - 2 Tbsp
- salt - 1 tsp
- butter - 1/4 c
- nutmeg - 1/2 tsp
- confectioners sugar - 3/4 c
- baking powder - 2 tsp
- baking soda - 2 tsp
- all-purpose flour - 3 c
- margarine or butter, softened
- dash of salt - 1 item
- raisins - 1 c
- pecan halves - 8 item
- reserved pineapple liquid - 1/4 c
- can yams, drained reserving 1 Tbsp - 1 oz
- can crushed pineapple, well drained reserving 1/4 c - 1 1/4
- Cut up yams and add to creamed mixture, beating until well mixed
- yam liquid - 1 Tbsp
How to make down south yam cake:
In large bowl, cream sugar, butter and vanilla until light and fluffy; add eggs, 1 at a time, beating well after each addition. Cut up yams and add to creamed mixture, beating until well mixed. Add flour, baking powder, soda, salt, cinnamon and nutmeg; mix well. By hand, fold in pecans, raisins and pineapple. Spoon mixture into a greased and floured 10-inch tube pan; spread evenly. Bake in 325° oven for 65 to 75 minutes or until toothpick inserted in center comes out clean. Cool upright in pan 10 minutes, then invert on serving plate. Spoon frosting over cake; allow some to run down sides.Frosting:1/2 c. firmly packed brown sugar dash of salt1/4 c. butter1/4 c. reserved pineapple liquid2 Tbsp. milk1 Tbsp. yam liquid3/4 c. confectioners sugar1 tsp. vanilla In medium saucepan, combine brown sugar, salt, butter, pineapple liquid, milk and yam liquid. Bring to a boil. Boil 3 minutes, stirring constantly. Remove from heat; beat in confectioners sugar and vanilla until smooth.
