Orange zucchini cake
Ingredients/Components
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 item
- milk - 1 2
- salt - 1/4 tsp
- flour - 3 c
- brown sugar - 2 c
- nutmeg - 1/2 tsp
- confectioners sugar
- baking powder - 3 tsp
- margarine - 1 c
- ground cloves - 1/4 tsp
- orange juice - 1/2 c
- grated orange rind - 1 Tbsp
- shredded zucchini - 1 c
How to make orange zucchini cake:
Glaze:1 1/2 c. confectioners sugar1 to 2 Tbsp. milk vanilla Cream orange juice and sugar together. Add eggs, one at a time. Alternately add to the creamed mixture the flour and spices, orange juice and zucchini. Pour into a greased 10-inch tube pan. Bake for 55 to 65 minutes, or until done in a 350° oven. Cool 10 minutes.Mix glaze ingredients and spread on cooled cake.
