  • cinnamon - 1 tsp
  • eggs - 4 item
  • vanilla - 1 item
  • milk - 1 2
  • salt - 1/4 tsp
  • flour - 3 c
  • brown sugar - 2 c
  • nutmeg - 1/2 tsp
  • confectioners sugar
  • baking powder - 3 tsp
  • margarine - 1 c
  • ground cloves - 1/4 tsp
  • orange juice - 1/2 c
  • grated orange rind - 1 Tbsp
  • shredded zucchini - 1 c

How to make orange zucchini cake:

Glaze:1 1/2 c. confectioners sugar1 to 2 Tbsp. milk vanilla Cream orange juice and sugar together. Add eggs, one at a time. Alternately add to the creamed mixture the flour and spices, orange juice and zucchini. Pour into a greased 10-inch tube pan. Bake for 55 to 65 minutes, or until done in a 350° oven. Cool 10 minutes.

Mix glaze ingredients and spread on cooled cake.
