Ingredients/Components
- sugar - 2 c
- can crushed pineapple
- salt - 1/2 tsp
- grated carrots - 2 c
- eggs - 3 item
- vanilla - 1 tsp
- cooking oil - 1 c
- cinnamon - 1 Tbsp
- chopped pecans - 1 c
- soda - 2 tsp
- flour - 3 c
- Beat eggs; add sugar and beat well
- pecans - 1/2 c
- stick oleo or butter, softened - 1 item
- pkg - 1 lb
How to make carrot cake:
Sift dry ingredients. Beat eggs; add sugar and beat well. Add pineapple, carrots, oil and vanilla. Add dry ingredients and mix well; add nuts. Bake in greased and floured tube pan at 350° about 1 hour or until done.Topping:1 (8 oz.) pkg. cream cheese2 tsp. vanilla1/2 c. pecans1 stick oleo or butter, softened1 lb. pkg. powdered sugar Mix ingredients and frost cooled cake.Recipe categories: Desserts, Cakes, Carrots.
