Ingredients/Components

  • sugar - 2 c
  • can crushed pineapple
  • salt - 1/2 tsp
  • grated carrots - 2 c
  • eggs - 3 item
  • vanilla - 1 tsp
  • cooking oil - 1 c
  • cinnamon - 1 Tbsp
  • chopped pecans - 1 c
  • soda - 2 tsp
  • flour - 3 c
  • Beat eggs; add sugar and beat well
  • pecans - 1/2 c
  • stick oleo or butter, softened - 1 item
  • pkg - 1 lb

How to make carrot cake:

Sift dry ingredients. Beat eggs; add sugar and beat well. Add pineapple, carrots, oil and vanilla. Add dry ingredients and mix well; add nuts. Bake in greased and floured tube pan at 350° about 1 hour or until done.Topping:1 (8 oz.) pkg. cream cheese2 tsp. vanilla1/2 c. pecans1 stick oleo or butter, softened1 lb. pkg. powdered sugar Mix ingredients and frost cooled cake.
