Ingredients/Components
- sugar - 2 c
- cinnamon - 1 2
- eggs - 4 item
- vanilla - 2 tsp
- chopped pecans - 1/2 c
- pkg - 1 oz
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour
- soda - 2 tsp
- grated carrots - 2 3
- stick butter - 1 item
- Crisco oil
- small can crushed pineapple, drained - 1 item
- Beat in the eggs
How to make carrot cake:
Cream the sugar and oil. Beat in the eggs. Add the flour, soda, cinnamon and salt. Fold in the pineapple, carrots and nuts. Bake in a 9 x 13-inch pan at 350° for 40 to 60 minutes.Icing for Carrot Cake:1 lb. powdered sugar1 stick butter1 (8 oz.) pkg. cream cheese1/2 c. chopped pecans2 tsp. vanilla Mix the butter and cheese (at room temperature).
