  • sugar - 2 c
  • cinnamon - 1 tsp
  • pkg - 1 oz
  • vanilla flavoring - 2 tsp
  • grated carrots
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • plain flour - 2 c
  • whole eggs - 4 item
  • nuts, chopped fine - 1 c
  • Wesson oil
  • 1/2 boxes confectioners sugar - 1 item
  • Beat eggs into sugar, one at a time

How to make carrot cake:

Sift together all dry ingredients. Beat eggs into sugar, one at a time. Add oil to dry ingredients, a little at a time. Add this mixture to eggs and sugar. Add carrots and nuts. Bake in three 8-inch pans at 350° for 30 minutes.Icing:1 stick butter1 (8 oz.) pkg. Philadelphia cream cheese1 1/2 boxes confectioners sugar2 tsp. vanilla flavoring Mix ingredients together. Spread on cool cake.
