Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- vanilla - 1 tsp
- chopped pecans - 1 c
- pkg - 1 oz
- flour - 2 c
- stick margarine - 1 item
- grated carrots - 3 c
- baking powder - 2 tsp
- baking soda - 2 tsp
- eggs, well beaten - 4 item
- Wesson oil
- Icing:1 box confectioners sugar
How to make carrot cake:
Icing:1 box confectioners sugar1 (8 oz.) pkg. cream cheese1 stick margarine1 tsp. vanilla Cake: Combine sugar and Wesson oil; mix well. Add eggs, well beaten. Sift together 2 or 3 times the flour, baking soda and baking powder. Mix well with batter. Add pecans to mixture. Add carrots last, a small amount at a time. Bake 1 hour at 350° (only 45 minutes if baked in a large loaf pan).Icing: Mix all ingredients together well. Spread on cooled cake.
