Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • pkg - 1 oz
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • stick margarine - 1 item
  • vanilla flavoring - 1 tsp
  • soda
  • grated carrots - 2 c
  • baking powder - 2 tsp
  • plain flour - 2 c
  • salad oil
  • Add eggs, one at a time, beating after each one
  • small can crushed pineapple in heavy syrup, drained - 1 item

How to make carrot cake:

Blend oil and sugar. Add eggs, one at a time, beating after each one. Sift dry ingredients together and add carrots, nuts and pineapple. Bake in 3 layers for 30 to 35 minutes at 350°.Frosting:1 box confectioners sugar1 (8 oz.) pkg. cream cheese1 tsp. vanilla flavoring1 stick margarine Cream the cheese, margarine and vanilla; blend, then add sugar. If it needs to be thinner, add a little pineapple juice.
